Smoked Salmon Salad

  • 80g smoked salmon
  • 2 cups mixed salad leaves
  • ¼ cucumber, sliced thinly
  • 50g beetroot, (canned, drained and pat dried)
  • 6 cherry tomatoes, halved
  • 3 fresh basil leaves
  • Drizzle extra virgin olive oil


  1. Arrange all the salad vegetables in a large bowl. Top with the smoked salmon and basil, then drizzle with extra virgin olive oil
  2. Add salt and pepper or additional herbs of your choice for added flavour.
