- Place eggs, protein powder, coconut flour, banana and coconut milk into a blender and blend until smooth.
- Heat the half the oil in a large non stick frying pan over a medium heat. Add tablespoons of the batter and cook until bubbles form and burst on the surface.
- Turn and cook the other side for 2 minutes or until golden. Repeat with the remaining oil and batter.
Makes 8 pancakes.
