Ingredients

Acai Berry & Cacao Breakfast Parfait

Makes 2 medium servings.

For the Acai and Mixed Berry Chia Pudding:
• 3 tablespoons Bioglan Organic Chia seeds
• ¼ cup frozen mixed berries (thawed and pureed)
• 1 tablespoon Bioglan Coconut Sugar, or to taste
• 2 teaspoon Bioglan Organics Acai + Berry Powder
• 1/2 teaspoon vanilla extract (optional)

For the Chocolate Overnight Oats:
• 3/4 cup rolled oats
• 1/4 cup Bioglan Organic Chia seeds
• 2 tablespoons Bioglan Coconut Sugar, or to taste
• 1 heaped tbspn Bioglan Organics Cacao Powder
• 2 cups unsweetened almond milk

For the Coconut Whipped Cream:
• 1 can full-fat coconut milk, chilled in fridge for 24 hours
• 1 tablespoon maple syrup, or to taste
• ½ tsp vanilla extract

For the toppings:
Bioglan Coconut Chips
Bioglan Bites, Coconut + Cacao

Directions

For the Acai and Mixed Berry Chia Pudding:

  1. In a container with a lid, add all ingredients and whisk until well combined.
  2. Secure container with lid and let sit on counter for 2 to 3 minutes. Stir mixture again to help prevent chia seeds from clumping up.
  3. Chill in fridge for at least 4 hours or overnight.

For the Chocolate Overnight Oats:

  1. In a container with a lid, whisk together the oats, Bioglan Organics Chia Seeds, Bioglan Coconut Sugar, and Bioglan Organics Cacao Powder until combined.
  2. Pour in almond milk, and whisk until no clumps of cocoa powder remain.
  3. Secure container with lid and let sit on counter for 2 to 3 minutes. Stir mixture again to help prevent chia seeds from clumping up.
  4. Chill in fridge for at least 4 hours or overnight.

For the Coconut Whipped Cream:

  1. After chilling can of coconut milk, open the can and scoop solid white coconut cream into a bowl without scooping in remaining water at the bottom of can.
  2. Add maple syrup and vanilla extract into coconut cream and beat unit smooth and fluffy with hand mixer or stand mixer.

To assemble parfait:

  1. Once chia pudding and oats are ready, scoop in whipped coconut cream to the bottom of glass or jar, add chocolate overnight oats, followed by acai and mixed berries chia pudding. Continue to layer until top of jar or glass has reached.
  2. Top parfait with Bioglan Coconut Chips and Bioglan Superfoods Bites, Coconut + Cacao and enjoy! Can be made ahead and kept in refrigerator for up to 3 days.
